The project is aimed at creating an innovative technology for the production of functional food products aimed at consumers with special dietary needs. The relevance of the project is due to the growing number of people suffering from Celiac disease, as well as the increasing demand for gluten-free products. Currently, the Kazakh market is heavily dependent on imported gluten-free products, which are characterized by high cost and limited assortment. This creates the need to develop domestic technologies that make it possible to produce affordable and high-quality products. The main idea of the project is to use local raw materials — flour from leguminous crops (peas, chickpeas, lentils, etc.), which do not contain gluten, for the production of flour confectionery products such as biscuits, muffins and other products. This will not only provide consumers with safe products, but also increase their nutritional value due to the high content of protein, dietary fiber, vitamins and minerals. The aim of the project is to develop the theoretical and practical foundations for creating gluten-free confectionery products using Kazakhstani leguminous raw materials, as well as to expand the range of functional food products. The project will investigate the properties of various types of gluten-free flour, develop optimal formulations and technological modes of production, and study the organoleptic, physico-chemical, and nutritional characteristics of the finished products. Special attention will be paid to improving the texture, taste and appearance of products, which is one of the key tasks in the development of gluten-free products. The practical significance of the project is to create affordable domestic gluten-free products, reduce dependence on imports, and develop Kazakhstan's processing industry. The use of local raw materials will reduce the cost of production and increase its competitiveness. The social effect of the project is expressed in improving the quality of life of people in need of specialized nutrition, as well as in the formation of a healthy eating culture among the population. The implementation of the project will ensure the creation of an innovative technology for the production of gluten-free flour confectionery products, expand the range of food products and strengthen the country's food security through the effective use of domestic resources. Mukhtar Chumanovich Tultabaev - BR10764977 "Development of technology for the production of water-oil food emulsions from safflower seeds for the production of new types of food products" The project is aimed at creating and improving an innovative technology for processing safflower seeds to produce stable water-oil (oxystable) food emulsions intended for use in the food industry. The main goal of the project is to develop a scientifically proven technology for producing emulsions from safflower oil with improved functional properties, including increased stability, long shelf life and suitability for the production of new types of food. As part of the study, the fatty acid composition of the obtained herbal compositions was studied, which made it possible to evaluate their nutritional value and functional properties. Optimal technological modes of storage of emulsions have been developed, ensuring the preservation of their quality and an increase in shelf life. A technological instruction has also been prepared, including the processes of collapsing, mixing and storing raw materials and finished products. Special attention is paid to the study of the effectiveness of using water-oil emulsions based on safflower oil in the production of functional food products. The results obtained confirm the possibility of their application to expand the range of products for healthy and safe nutrition. The practical significance of the project lies in the creation of an affordable raw material base and the introduction of new technologies for processing oilseeds, which contributes to the development of the food industry and the formation of new business lines. As part of the project, a production and experimental workshop for processing oilseeds was created, and a set of regulatory and technical documentation was developed, including an enterprise standard, technological regulations and recommendations for the production of oxystable plant compositions. As a result of the project, an expansion of the range of functional food products, an increase in the efficiency of the use of plant raw materials and the creation of prerequisites for the commercialization of the developed technology in the food industry were ensured.
