Research activity on Goal 2
Development of a technology for producing gluten-free flour confectionery products from the flour of Kazakhstan legume crops
The project aims to create an innovative technology for producing functional foods for consumers with special dietary needs. Using flour from local legume crops (peas, chickpeas, lentils) will reduce dependence on imported gluten-free products and enhance the country's food security.
Development of a technology for producing water-oil food emulsions from safflower seeds
The project aims to create an innovative technology for processing safflower seeds to produce stable food emulsions with improved functional properties. A process specification has been developed, optimal storage conditions have been studied, and a pilot production workshop for processing oilseed crops has been established.
